Sambal Brinjals/Sambal Terong

We love sambal terong but like a piece of sponge, it can absorb a lot of oil.

What I did was to steam the sliced brinjals before frying. And it kept the brinjal from getting too oily.

This recipe is so easy and quick to make especially when you need an extra spicy vege dish to add-on to your menu.

Ingredient

*2 brinjals, cut in 6cm lengths and sliced in 1cm thick pieces

*1 tabsp minced garlic

*5 tabsp crispy prawn chili (store-bought, you can add more if you have more brinjals)

*1 teasp sugar

*oil for frying

Method

1. Steam brinjal pieces till soft but firm.

2. Heat frying pan, then add a little oil to fry minced garlic till fragrant. Put in crispy prawn chili to stir fry with garlic.

3. Add the steamed brinjal pieces and fry to coat every piece with prawn chili mixture.

4. Turn onto plate and garnish.

Note – There are many great tasting crispy prawn chili in the market. So any of the brands you like will be great with this recipe.
