Crispy Oven Baked Chicken Drumlets

What got me on this recipe was my friend in the US who frequently laments that her husband would not eat chicken stew and does not like her oven baked chicken because it’s not crispy. He loves his chicken wings and he wants it crispy. So he will go for his weekly hot wings fix at his favourite restaurant, Alondras.

My friend resorted to getting an air-fryer that somewhat satisfied her husband. However, cooking the wings, though in 25 minutes, was only at a speed of 4 drumlets at a go – sampai tua!

This recipe delivers a crunch, it’s not greasy and goes perfectly well with Vietnamese dipping sauce.  Only 4 ingredients and  preparation is simple – it’s a pop-in-the-oven recipe. Great as as a snack or an addition to complement a party menu.

How simple is that! And did I say that it’s not greasy??



Ingredients
* 10-12 chicken drumlets wings
* 1/2 tabsp baking powder
* 1/2 tsp salt 
* 1 tsp black pepper

Method
1. Pre-heat oven to 130 degrees C.
2. Mix drumlets with baking powder, salt and black pepper.
3. Place drumlets on to a rack (so that oil will drip off) and bake in pre-heated oven 130 degrees C for 30 minutes.
4. Turn up temperature to 220 degrees and continue to bake chicken for 40 minutes or until golden brown.
5. Serve with Vietnamese dipping sauce, or Thai sweet chili sauce or make a honey sauce, or just bbq sauce to drizzle over the chicken.
